ABOUT THIS WINE

Having finished fermentation in the bottle, this is a Lambrusco di Sorbara that is to be consumed while young, within 1 or 2 years. Try pairing this with Fusilli pasta, courgettes, asparagus, basil and lemon rind or Spaghetti with clams.

Alessandro Medici takes fresh look at Lambrusco with his brainchild “Phermento,” a wine produced using exclusively Lambrusco di Sorbara grapes fermented using the Ancestral Method of sparkling wine production. Sorbara, which is one of the most delicate and lightly colored Lambrusco grapes, has recently grown in popularity in Emilia Romagna. Its high level of acidity and lack of tannin are well suited to the Ancestral method of production. The Sorbara vines are 35 years old, grown Cordone Speronato (cordon trained and spur pruned) in clay soil and with restricted yields. The wine ferments in bottle to brut nature (zero dosage), and is capped with a crown cap. The internal pressure is 2.5 bars, making this wine frizzante. The wine is best served at a temperature of 46 – 50 degrees Fahrenheit and should be consumed within two years of vintage.

ABOUT THIS PRODUCER

The year is 1890, on the Via Emilia, the most important commercial road of the town. Remigio Medici owned three successful taverns and decided to found a winery with the aim of making the most of the family vineyards, located between the Via Emilia and the foothills of the Enza valley. Remigio’s son Ermete expanded the business and consolidated the company’s reputation, before handing over the reins to his sons Valter and Giorgio, who began to export, further expanding the brand.

Today the company owns about 80 hectares of vineyards (grown entirely organically), distributed among the areas with the highest wine-making vocation in the Emilia-Romagna region, and exports to over 70 countries in the world. Now in their fifth generation, represented by Alessandro, the Medici family can boast solid experience in the vineyard as well as the cellar.
